Cake Mix Carrot Cake Cookies Recipe

These cake mix carrot cake cookies are easy to make and taste delicious. They are great to eat for breakfast or dessert, or to have as a snack.

Ingredients
  

  • 1 15.25 oz.  box spice cake mix
  • ½ tsp ground cinnamon
  • ½ tsp pumpkin pie spice
  • ⅓ cup finely shredded carrots
  • ⅓ cup finely chopped pecans or walnuts
  • ⅓ cup raisins
  • ½ cup applesauce
  • ¼ cup olive oil
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper.
  • Add spice cake mix, ground cinnamon, and pumpkin pie spice to a large mixing bowl. Whisk to combine ingredients.
  • Add shredded carrot, walnuts, and raisins to the bowl. Toss to coat with cake mix.
  • Next add applesauce, olive oil, vanilla, and eggs to the bowl. Stir to combine ingredients.
  • Scoop carrot cake cookie batter onto the cookie sheet, spacing cookies 2 inches apart. Each scoop should contain about 2 Tbsp of cookie dough.
  • Bake the cookies for 7 to 9 minutes, or until a toothpick inserted into the center of the cookies comes out clean.
  • Place baked carrot cake cookies on a cookie rack to cool. Serve with coffee, tea, hot cocoa, or milk for a delicious snack or dessert.
