Here is a simple recipe to make creamy cucumber salad, a cool and refreshing summer salad or side dish.

Ingredients
  

  • 2 large cucumbers trimmed and thinly sliced
  • ½ cup thinly sliced red onion
  • 2 tablespoons fresh dill chopped
  • 2 cloves garlic minced
  • Grated zest of 1 lemon
  • ½ cup Greek yogurt or sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • ¼ teaspoon onion powder
  • Salt and pepper to taste

Instructions
 

  • Add the sliced cucumbers, sliced red onion, chopped dill, minced garlic, and lemon zest to a large bowl.
  • In a separate small bowl, mix together the Greek yogurt (or sour cream), lemon juice, apple cider vinegar, honey, and onion powder.
  • Pour the yogurt mixture over the cucumber mixture and stir until the ingredients are well combined. Season the cucumber salad with salt and pepper to taste.
  • Chill the cucumber salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.

Notes

Store creamy cucumber salad in an airtight container in the refrigerator for up to 2 to 3 days. For best flavor and freshness, it is generally best to consume the salad within 1 to 2 days. Refrigerate the cucumber salad promptly after serving; do not let the salad sit at room temperature. Refrigerate the salad at temperatures below 40 degrees Fahrenheit to help maintain food safety.
