Easy Pumpkin Cookies Recipe

Ingredients
  

  • 1 box yellow cake mix
  • 1 tsp pumpkin pie spice
  • 2 Tbsp  light brown sugar
  • 1 cup white baking chips or morsels
  • ¼ cup chopped pecans
  • 1 cup pure pumpkin purée
  • ½ cup plain Greek yogurt
  • 2 Tbsp olive oil
  • 1 tsp vanilla extract
  • 2 large eggs

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper.
  • Add cake mix, pumpkin pie spice, and light brown sugar to a large mixing bowl. Whisk to combine ingredients.
  • Add white chocolate chips and chopped pecans to the bowl. Toss to coat with cake mix.
  • Next add pumpkin purée, Greek yogurt, olive oil, vanilla, and eggs to the bowl. Stir to combine ingredients.
  • Scoop pumpkin cookie batter onto the cookie sheet, spacing cookies 2 inches apart. Each scoop should contain about 1-½ to 2 tablespoons of cookie dough.
  • Bake the cookies for 9 to 11 minutes, or until a toothpick inserted into the center of the cookies comes out clean.
  • Place the pumpkin cooked cookies on a cookie rack to cool. Serve with coffee, tea, hot cocoa, or milk for a delicious snack or dessert.
