Instructions
Heat 1 teaspoon of butter or oil in a saucepan over medium heat. Add the pumpkin puree, ground cinnamon, ground ginger, ground nutmeg, ground allspice, and salt to the saucepan. Stir to combine the ingredients. (Tip: You can also substitute 1 ½ teaspoons of pumpkin pie spice blend for the ground cinnamon, ginger, nutmeg, and allspice).
Cook for 2 to 3 minutes, or until the mixture begins to turn golden brown and fragrant; whisk the mixture frequently to blend. This step will help bring out the natural flavors of the pumpkin and spices.
Once the pumpkin mixture is golden brown, reduce the heat to low and slowly whisk in the half and half (or milk and cream), light brown sugar, maple syrup (optional), or any additional sweeteners you are using.
Continue to heat the pumpkin and cream mixture, stirring frequently, until it starts to steam—but do not let it boil. Cook the pumpkin and cream mixture for 3 to 5 minutes longer, whisking frequently.
Remove the saucepan from the heat and whisk in the vanilla extract and almond extract (optional).
For a smoother coffee creamer, strain the mixture through a fine mesh sieve to remove any pumpkin pulp or bits of spices (optional).
Let the pumpkin spice coffee creamer cool to room temperature, and then transfer it to a jar or bottle and refrigerate it. Shake or stir the creamer well before each use.
Notes
This creamer may be stored in an airtight food storage container in the refrigerator for up to 3 to 4 days. Feel free to adjust the amounts of light brown sugar, maple syrup, or pumpkin pie spices according to your taste preferences.
