Ingredients

  • ½ cup Italian dressing
  • ¼ cup soy sauce
  • 2 tablespoons vinegar such as red wine vinegar, balsamic vinegar, or distilled vinegar (optional)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 pounds boneless skinless chicken breasts

Instructions

  • To marinate the chicken:
  • Add the Italian dressing, soy sauce, vinegar (optional), honey, Dijon mustard, minced garlic, honey, dried basil, dried oregano, onion powder, salt, and pepper to a mixing bowl. Whisk until the ingredients are well combined.
  • Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, making sure that it’s evenly coated.
  • Seal the bag or cover the dish, and then refrigerate the marinated chicken for at least 30 minutes, but preferably for a few hours or overnight.
  • When you’re ready to cook the chicken, remove the chicken breasts from the marinade and discard any excess marinade.
  • For grilling the chicken:
  • Preheat a grill pan on the stove over medium high heat. Lightly oil the grill pan to help prevent sticking.
  • Once the grill pan is hot, use a pair of heat resistant tongs to carefully place the marinated chicken breasts onto the pan. Leave some space between each chicken breast to allow for air circulation.
  • Cook the chicken breasts for about 6 to 8 minutes on each side, or until they are fully cooked through and the internal temperature of the chicken reaches 165°F, as measured by an instant read meat thermometer.
  • Remove the grilled chicken breasts from the grill pan and let them rest for a few minutes before serving to allow the juices to redistribute.

Notes

1. If marinating the chicken for an extended period of time, then turn the chicken breasts occasionally to ensure that all sides are evenly coated and receive the same amount of marinating time.
2. Use a clean pair of tongs to carefully flip the chicken breasts halfway through cooking to ensure even browning. Use warm water and soap to wash tongs and other tools and surfaces that touch raw or uncooked chicken in between uses to help prevent cross contamination.
