- 2 cups peach purée or peach nectar or more to taste
- 1 bottle chilled sparkling wine substitute, such as sparkling grape juice or sparkling cider 750 ml
- ½ cup simple syrup adjust to taste
- Peach slices or raspberries for garnish optional
Add 2 cups of peach purée or peach nectar to a large pitcher. Slowly pour in the chilled sparkling wine substitute, stirring gently to combine the ingredients .
Add ½ cup of simple syrup to the pitcher, adjusting the amount to your desired sweetness level (optional).
If desired, add ice to the pitcher to keep the Bellini cold while serving. Stir the mixture well to ensure the ingredients are well combined.
Pour the peach Bellini into champagne flutes, filling each glass about halfway. Serve immediately.
- To make homemade peach purée: Carefully wash, peel, and core 4 to 5 medium sized peaches. Slice the peaches and add them to a blender, along with ¼ cup of water (add a little more water if needed, for a smooth blend). Pulse to blend the ingredients until a smooth purée forms.
- Strain the peach purée through a fine mesh sieve before adding it to the pitcher to make Bellinis.
- If making homemade peach purée in a blender, you can add a handful of frozen raspberries to the mix to give the drink a slightly blush color.
