Ingredients
  

  • 2 cups peach purée or peach nectar or more to taste
  • 1 bottle chilled sparkling wine substitute, such as sparkling grape juice or sparkling cider 750 ml
  • ½ cup simple syrup adjust to taste
  • Peach slices or raspberries for garnish optional

Instructions
 

  • Add 2 cups of peach purée or peach nectar to a large pitcher. Slowly pour in the chilled sparkling wine substitute, stirring gently to combine the ingredients .
  • Add ½ cup of simple syrup to the pitcher, adjusting the amount to your desired sweetness level (optional).
  • If desired, add ice to the pitcher to keep the Bellini cold while serving. Stir the mixture well to ensure the ingredients are well combined.
  • Pour the peach Bellini into champagne flutes, filling each glass about halfway. Serve immediately.

Notes

  • To make homemade peach purée: Carefully wash, peel, and core 4 to 5 medium sized peaches. Slice the peaches and add them to a blender, along with ¼ cup of water (add a little more water if needed, for a smooth blend). Pulse to blend the ingredients until a smooth purée forms.
  • Strain the peach purée through a fine mesh sieve before adding it to the pitcher to make Bellinis.
  • If making homemade peach purée in a blender, you can add a handful of frozen raspberries to the mix to give the drink a slightly blush color.
