  • 1 15 oz. can black beans, rinsed and drained
  • 1 15 oz. can sweet corn kernels, rinsed and drained or grilled corn from 2 to 3 corn cobs
  • 2 roma tomatoes cored and diced
  • ½ cup diced bell pepper
  • ½ cup diced red onion
  • ½ cup Italian dressing
  • 1 Tbsp lime juice about ½ a lime


  • Add ingredients to a large mixing bowl and stir until well combined. Cover and refrigerate for 6 to 8 hours, or until ready to serve.


Notes: You can also substitute grilled corn for canned corn. Slice enough grilled corn off the cob to equal about 2 cups of corn and add it to the salad.
