Here is a creamy pasta recipe using mushrooms, spinach, ricotta cheese, alfredo sauce, and more to make a delicious and easy dinner recipe that is perfect for weeknights or for special occasions.

  • 12 oz. penne pasta
  • 6 cups fresh baby spinach leaves washed and dried
  • 6 oz. fresh baby bella mushrooms cleaned and sliced
  • 1 cup frozen sweet peas thawed and drained
  • 2 cups cooked diced chicken* (optional)
  • 1 15 oz. jar alfredo sauce
  • cup pesto sauce
  • ¼ cup minced fresh parsley
  • 2 cloves garlic peeled and minced
  • 1 15 oz carton ricotta cheese
  • 1 cup shredded Italian blend cheese
  • 1 cup heavy cream or milk
  • 2 large eggs
  • ½ cup shredded Italian blend cheese


  • Preheat the oven to 350 degrees Fahrenheit. Grease a 2-quart baking dish, or line it with parchment paper for easy clean up.
  • Prepare the pasta according to package directions; drain. Add spinach, mushrooms, peas, and chicken (optional) to the pot with the pasta. Stir to combine ingredients.
  • Add alfredo sauce, pesto sauce, parsley, garlic, ricotta cheese, Italian cheese, heavy cream or milk, and eggs to a bowl. Stir to combine ingredients.
  • Divide the pasta and vegetables into two parts. Spread one part of the pasta and vegetables into the bottom of the casserole dish.
  • Layer the alfredo sauce mixture over the pasta and vegetables. Repeat, adding one more layer of pasta and vegetables and another layer of the cheese mixture.
  • Sprinkle shredded Italian cheese over the pasta bake.
  • Bake 35 minutes, or until the pasta bake is bubbly. Remove from the oven, and cool before serving.


Instead of chicken, you could also add cooked salmon to the casserole. One can of boneless salmon or two (5 oz.) pouches of boneless salmon can be substituted for cooked, diced chicken.
