Old Fashioned Cornbread Salad

Here is how to make delicious and easy cornbread salad with a creamy and savory dressing. Cornbread salad makes a perfect summer side dish for barbecue and potluck dinners.

Ingredients
  

  • 6 cups cubed or crumbled cornbread homemade or store bought
  • 2 cups finely shredded lettuce optional
  • 2 cups diced tomatoes
  • 1 15 oz can black beans, pinto beans, or red kidney beans rinsed and drained
  • 1 15 oz can sweet corn kernels rinsed and drained
  • 1 medium bell pepper cored and diced
  • ½ cup red onion finely chopped
  • 8 slices bacon cooked and crumbled
  • 4 to 6 green onions trimmed and sliced
  • 1 cup finely shredded cheddar cheese divided
  • ¼ cup chopped fresh cilantro or parsley optional, for garnish
  • 1 cup mayonnaise
  • 1 cup sour cream or Greek yogurt
  • Juice of one lemon or one lime
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried dill
  • ½ teaspoon each salt and pepper to taste

Instructions
 

  • Add the cubed or crumbled cornbread, lettuce (optional), diced tomatoes, beans, sweet corn kernels, diced bell pepper, red onion, bacon, and ½ cup of shredded cheddar cheese to a large mixing bowl; or layer the ingredients in a large baking dish.
  • In a separate small bowl, whisk together the mayonnaise, sour cream or Greek yogurt, lemon or lime juice, dried parsley, garlic powder, onion powder, dried dill, salt, and pepper to make the salad dressing.
  • Pour the dressing over the salad ingredients and gently toss or stir until all of the ingredients are evenly coated. Transfer the salad to a serving dish if the salad was mixed in a bowl.
  • Sprinkle the remaining cheese and diced green onions over the salad. If desired, garnish the cornbread salad with chopped fresh cilantro or parsley.
  • Serve the cornbread salad immediately, or refrigerate the salad for at least 1 hour before serving to allow the flavors to meld.
