We love this recipe because it is easy to make, and the recipe uses sweet potatoes, one of our favorite vegetables. Roasting brings out the sweetness of sweet potatoes, making them the perfect vegetable side dish for a holiday meal.

Also, stuffed sweet potatoes can be a time saver when you need a sweet potato side dish for Thanksgiving, Christmas, or any other holiday, but you don’t have the time or energy to boil and mash sweet potatoes to make sweet potato casserole. This sweet potato side dish practically makes itself.

How to Make Stuffed Sweet Potatoes

The first thing that you’ll need to do is select 6 good sized sweet potatoes—medium or large will generally do. You want a big enough sweet potato to give each person plenty to eat, since one stuffed sweet potato will make a side dish for each person.

Wash the sweet potatoes under warm water, using a vegetable brush to scrub the potatoes clean. Then pat the sweet potatoes dry with a clean kitchen towel.

Carefully use a knife to make several small cuts in each potato. The cuts will allow steam to escape as the sweet potatoes cook.

Preheat the oven to 400 degrees Fahrenheit. Grease the inside of a large baking dish.

Wrap each sweet potato in aluminum foil to cover, then arrange the sweet potatoes in a single layer in the baking dish.

Bake the sweet potatoes for 45 minutes, or until the potatoes are fork tender. Use caution when handling the sweet potatoes, because they will be hot. Also, watch out for escaping steam when unwrapping the foil packets, slicing, or otherwise handling the sweet potatoes.

Let the baked sweet potatoes cool, until the sweet potatoes are cool to the touch. Meanwhile, make some cinnamon butter by whisking together the butter, brown sugar or honey, ground cinnamon, vanilla extract, and salt in a bowl.

Then slice each potato in half lengthwise. Gently squeeze the sides of each sweet potato to open the potato, and create a space at the center of the potato to fill with marshmallow stuffing.

Coat the inside of each sweet potato with cinnamon butter. Then fill the center of the sweet potato with marshmallows. Top the marshmallows with chopped pecans, if desired.

Return the sweet potatoes to the oven to bake for 10 to 15 minutes longer, or until the marshmallows are golden brown and gooey to taste.

Can I Cook Sweet Potatoes in the Microwave?

Yes, you can cook sweet potatoes in the microwave. However, the sweet potatoes may not develop as much flavor as they would when you make baked sweet potatoes in the oven.

Can I Make Ahead Stuffed Sweet Potatoes Before the Holidays?

You can roast the sweet potatoes ahead of time, to save some time when making stuffed sweet potatoes. Bake the sweet potatoes, allow the potatoes to cool, and then store the roasted sweet potatoes in an airtight container in the refrigerator for up to 3 days.

When you’re ready to make and serve the marshmallow stuffed sweet potatoes, slice each sweet potato into halves lengthwise. Then fill the center of the potato with cinnamon butter, marshmallows, and nuts (optional).
