How to Make Roasted Carrots
Making roasted carrots is easy, especially when you start with a bag of baby carrots that have already been washed and peeled for you. You can also use large carrots that have been scrubbed clean, rinsed, and peeled and cut into bite sized chunks or halved.
Remove the carrots from the bag and place them in a colander. Rinse the carrots under running water to clean, then allow the carrots to drain. If using fresh carrots that still have a small amount of dirt on them, use a vegetable brush to scrub the carrots clean under warm running water.
Tip: If using whole carrots instead of prewashed baby carrots, scrub and rinse the carrots, before trimming and peeling them with a vegetable peeler. Rinse the carrots to remove any stray pieces of peel, and then slice the carrots into bite sized pieces or halves.
Pat the carrots dry with a clean towel. Place the carrots in a bowl and then add honey, olive oil, salt, and a herb seasoning blend of your choice to the bowl. Good herb seasoning blends include lemon pepper and salt free herb seasonings.

Ingredients
- 2 lbs baby carrots or whole carrots, rinsed, trimmed, and sliced
- 4 Tbsp honey
- 2 Tbsp olive oil
- 2 tsp herb seasoning blend optional
- ¼ tsp salt optional
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
- Scrub the carrots with a vegetable brush under running water to help remove dirt and grime, or thoroughly rinse prewashed carrots in a colander. Pat the carrots dry with a towel, and then slice them into bite sized pieces or halves, if desired.
- Add the carrots, honey, olive oil, herb seasoning blend (optional), and salt (optional) to a large mixing bowl. Toss to combine ingredients, and coat the carrots with honey, oil, and seasoning.
- Spread the carrots over the parchment paper. Bake 35 to 40 minutes, or until the carrots are golden brown and tender.
