  • 4 large flour tortillas burrito sized
  • 8 large eggs
  • 8 slices thick bacon, cut into 1 inch pieces, or ½ lb. of ground breakfast sausage, or ½ lb. of fresh ground chorizo
  • 2 medium potatoes or 2 cups frozen hash browns thawed and drained
  • ½ teaspoon garlic powder
  • ½ teaspoon parsley
  • ½ teaspoon paprika
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 1 medium bell pepper cored and diced
  • ½ onion peeled and diced
  • 1 cup refried beans, pinto beans, or black beans pinto beans, or black beans
  • ½ cup of your favorite salsa or pico de gallo
  • 2 cups shredded cheddar or Monterey Jack cheese
  • Burrito toppings such as chopped fresh cilantro, sliced avocado, sliced olives, or sour cream

Instructions

  • Cook the meat or protein: Add 2 tablespoons of cooking oil to a skillet and heat the skillet over medium heat. If using bacon, then cook according to package directions until the bacon is fully cooked crispy. Drain the cooked bacon on paper towels.
  • For sausage or chorizo, add the meat to the skillet and cook until it is browned and cooked through, breaking the sausage or chorizo up as it cooks; set aside. For plant based breakfast meat alternatives, prepare according to package directions, and then set aside.
  • Cook the potatoes: If using fresh potatoes, then peel and dice the potatoes into small cubes. Add 2 tablespoons of cooking oil to the skillet. Fry the potatoes in the leftover bacon fat or oil until the outsides of the potatoes are crispy and the insides are tender. If using hash browns, then cook the hash browns according to package instructions. Season the potatoes with garlic powder, parsley, paprika, and salt and pepper as they cook.
  • Once the potatoes are done, add the diced pepper and onion to the skillet. Sauté the bell pepper and onion until they are softened, about 3 to 5 minutes. Remove the vegetables from the skillet.
  • Heat the beans (Optional): While the potatoes are cooking, pour ½ cup of beans into a pot and cook according to package directions. Once the beans are warmed through, remove the pot from heat.
