Cake mix cookies are great to make when you need to make a lot of cookies, but you don’t have a lot of time. The cookies usually store well for a few days, and they are great for packing in lunch boxes for a quick and easy dessert or snack.

These easy to make chocolate chip cookies are the perfect movie night, sleepover party, camping in the backyard, or sweet treat for the lunch box cookie.

How to Make the Best Chocolate Chip Cookies Using Cake Mix

Preheat the oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper.

Add butter, light brown sugar, vanilla extract, vegetable oil, sour cream, and eggs to a large mixing bowl. Whisk ingredients until the mixture is creamy. (The sour cream helps to lighten up the mixture–you can also substitute plain Greek yogurt).

Add white cake mix and salt to the mixing bowl. Stir to combine with the wet ingredients. Fold in the chopped pecans (optional) and chocolate chips. The cookie dough will be slightly stiff.

Use a cookie scoop to remove about 1-1/2 to 2 tablespoons (Tbsp.) of chocolate chip cookie dough from the bowl. Shape the scoop of dough into a ball, and then flatten the ball slightly. Repeat until all the chocolate chip cookie dough is shaped into rounds.

Optional: After the cookie dough is shaped into rounds, cover and refrigerate the cookie dough rounds for about 30 minutes to 1 hour before baking. This helps the dough to rest and allows time for the dry ingredients in the dough to absorb moisture, but it will increase the preparation time at least by the length of time that you refrigerate the dough. But you can also bake the cookies right away, if you are in a hurry, as soon as the cookie dough is made and shaped into rounds.
