How to Make Roasted Pumpkin or Winter Squash
Use a small pumpkin, such as pie pumpkin or kabocha winter squash. Cut the pumpkin into halves and remove the seeds and strings.
Slice the pumpkin into wedges or leave it in halves, depending on how you would like to serve it.
Place the pumpkin on a rimmed baking dish that has been lined with parchment paper. Drizzle olive oil over the pumpkin and season it with herbs and spices.
Preheat the oven to 375 degrees Fahrenheit. Bake 35 to 45 minutes, or until the pumpkin is golden brown and tender.

- 2 to 4 Tbsp olive oil
