Ingredients

  • 2 Tbsp vegetable oil
  • 1 lb boneless chicken breasts cut into ½-inch cubes
  • 1 medium onion cored and diced
  • 1 medium green bell pepper cored and diced
  • 1 15 oz. can white beans, like cannellini, great northern, or navy beans
  • 1-½ cups frozen sweet corn kernels or a 15.25 oz can sweet corn kernels
  • 1 4 oz. can diced mild green chiles
  • 1 Tbsp mild chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ¼ tsp cayenne pepper (optional)
  • ½ tsp each salt and ground black pepper
  • 1 tsp soy sauce
  • 1 tsp honey or light brown sugar
  • 4 cups unsalted chicken stock (1 quart)
  • ¼ cup heavy whipping cream
  • Cornstarch to thicken (optional)

Instructions

  • Heat vegetable oil in a large pot over medium-high heat. Add diced chicken, bell pepper, and onion to the pot. Cook, stirring frequently, for about 7 to 10 minutes or until the chicken is cooked through and lightly browned
  • Add white beans, corn, diced green chiles, chili powder, garlic powder, onion powder, ground cumin, oregano, cayenne pepper (optional), salt, ground black pepper, honey or brown sugar, and chicken stock to the pot. Stir to combine ingredients.
  • Bring to a boil, and then reduce heat to low. Cover the pot and simmer for 25 minutes or until chicken is fully cooked and vegetables are tender.
  • To thicken soup, mix 2 tablespoons cornstarch with 2 tablespoons cold water. Stir cornstarch mixture into chili. Bring to a boil and cook until chili is thickened to taste.
  • Stir in heavy cream just before serving white chicken chili. Serve white chicken chili with crushed tortilla chips, diced tomatoes, sliced avocados, or other chili toppings or side dishes of your choice
